The term hardness means how resistant to scratch is the mineral, not how strong it is. You can destroy a diamond with an iron hammer but you can not scratch it. To cut a diamond, powdered diamonds are glued to a carbide blade and then this blade can cut raw diamonds. Laser beams are also used.

they usually "cut" diamonds by fracturing them. That is, they have a sharp edge, and hit the diamond so that it cracks just like a piece of glass. However to get it into a more evened shape, they use a fine diamond chipped surface "kinda like sandpaper"
That wears the surface down smooth. It takes a lot of time and patience to put all the facets or "sides" onto a diamond. One wrong move, and it can go from being worth hundreds of thousands, to just a couple thousand, or even not much at all.
