eyes of dr tj eckleburg = god watching over everything (note Wilson's quote to Myrtle, when he says she can't fool God as he's looking out at the eyes)
clothing that characters wear = when gatsby is throwing his clothes everywhere, he is trying to impress Daisy
Myrtles differences from Daisy, Tom's violent act, and excessive drinking at parties are not symbols; a symbol is something concrete that stands for something abstract. The dog is a symbol of the impulsiveness of the affair.

I do think that Myrtle's differences from Daisy have symbolism, though.

Daisy is effortless; "born to it." She speaks carelessly with flawless grammar, whereas Myrtle is pretentious--she's trying to be like Daisy, but she isn't. You'll notice in her speech; she makes some very subtle grammatical errors that people usually make when they're not educated but trying to sound as if they are.

Excessive drinking at parties is very symbolic of the era. The '20s were a period of decadence and credit: People spent more than they had and pretended that the evils of life weren't real (like fascism in Europe and the Russian Revolution). Alcohol and being drunk put a person in a mindset in which it is very easy to be superficially happy, and in many ways the '20s were called the "party" and the '30s, which brought the Depression, the "hangover."
