I'd recommend the Cairn Hotel in Windsor Street. This is only a 5 minute walk from the city centre and is a nice middle of the road hotel, but not one that is bustling with tourists.
I used to have a family member who was a high up employee in the Balmoral (when it was still the old North British) and that is the finest & most famous hotel in the city. Too bad you didn't come and visit ten years ago! Ha, ha.
