What's Hiding in Your Teeth?
Buy some of that new mouth rinse that sticks to plaque and turns blue. Get some friends + 4 or 5 different toothpastes. Each person rinse with blue solution to show plaque areas and take picture of each. Have each one brush with one of the brands (regular brush - don't try to remove everything just be normal (don't let them look in mirror), then repeat the rinse. Take picture. Estimate which toothpaste seemed to remove the most plaque (judge by change in blue stains between before and after pictures). You will need friends as you will run out of plaque before the experiment is over if you try to do it yourself. ALSO most science fairs don't allow you to show faces, so the pictures will have to zoom in on the teeth so a person can't be identified.
I am sci fair judge and have seen severals versions of this - great for 6th grade level!

Do a project on reading verses auditory memory. For reading , make a group of peopleread a list of words. Then give out a test ti see how many words they can remember. For auditory, read the list of words outloud.
