This used to happen to me alot when I was a child......falling asleep in the back of the car whilst your parents are driving. You doze off, being lulled by the drone of the car engine and then suddenly the engine noise stops for a split second....and then continues again. WHY does this happen? Is it anything to do with quantum physics? Are there any other examples of this kind of thing happening?

I think this is a function of your state of consciousness and not of the physics of cars and sounds or anything having to do with QM in particular.

It's the brain getting used to the sound and kind of 'switching off' as you dive into sleep.
The sudden cessation of the sound wakes it up again and your sleep is interrupted without waking fully.

My familly and I experienced a simlar thing when on holiday in North Wales UK. We were close to the main railway line and, at 2.00am in the morning, the express mail train went by.
The first 2 nights it woke us up. For the next 2 or three nights, it didn't. The next night it was apparently very late and didn't go by .. we all woke up at 2.00am ...

Dude, your brain's just shutting off for a second, nothing to be all freaked out over. It's called SLEEP. Even if you're awake for the moment it happens, it's still sleep. And how on earth did you get quantum physics into this?

It's a glitch in the Matrix.
It's the fine line between consciousness and unconsciousness. The instant you don't hear the noise, you are asleep, the noise returns when your "awareness" returns.
