She had to face several obstacles in her life including poverty as a child, breast cancer, and so many other factors that could have stopped her. But instead of quiting, Gloria kept fighting and because of her will and _________ mind, she has become one of the most influencial women in the world.
I originally had headstrong but that didn't make sense.

I, personally, feel like there should be filled in a word that expresses perseverance of some kind, that helped her, along with her "will" to "keep fighting"
So I would say "...because of her will and determined mind"
Other suggestions: perseverant, unbending, adamant

Do you need the word mind in there?
Gloria kept fighting and because of her will and perseverance.
My reasoning is that mind isn't really describing the rest of the sentence, you don't need a good mind to be an influential person.
Will and perseverance describes how she is influential.

Scratch mind and use determination or perseverance and use an adjective such as strong before the word will. Srong, sound, etc., ...mind all would make sense, but would not fit within the context of the sentence.
....because of her strong will and determination, she has...
....because of her strong will and perseverance, she has...
