Not sure what you mean by stable. But go with the chord tones. The 1,3,5 of the scale. For example, in a C major scale, it's the C, E, & G that make up the chord. Go the piano and play C, E, & G together and you'll see what I mean. That clearly defines it as a major chord. If you want to jazz it up a bit, add the 7th (in this case, B). Play all four of those notes together and you'll hear it's a bit hipper. Those are the most important notes, and altering the 7th, 3rd, or the 5th will change the chord from major, to dominant, minor, diminished -- depending on what you do.
