Did everyone forget about Ke Huy-Quan, who played the inventive "Data"?
He now goes by Jonathan Ke Quan, and is a martial artist and stunt coordinator. He recently worked with Jet Li on "The One" (2001), and on the original "X-Men" (2000).
Corey Feldman ("Mouth") was on a season of "The Surreal Life" (2003), and played himself in the David Spade comedy "Dickie Roberts: Former Child Star" (2003). He is currently doing voices for "Super Robot Monkey Team Hyperforce Go!" (2004-2006), and working on a sequel to "The Lost Boys", which will be adapted as a television series.
In addition to "The Lord Of The Rings" trilogy, Sean Astin has recently starred in the television drama "24", and the Adam Sandler/Drew Barrymore romantic comedy "50 First Dates".

Sean Astin (Mikey) went on to star in a little known film triology called Lord of the Rings :)
Corey Feldman (Mouth) has starred in a few low budget films, but nothing much else.
Josh Brolin (Brand) is a small-time screen actor...nothing big time.
Martha Plimpton (Stef) is a Broadway actress now and she's guest starred in various TV shows, like Law and Order: SVU and etc.
I don't know about the others, sorry.

Most are still actors and Chunk is a lawyer. However, Josh Brolin married Diane Lane. He broke up with Minnie a while ago. Kerri Green writes screenplays on occasion. Ke Quan is a martial arts instructor and Martha, Corey, Josh and Sean are still in the game.

I loved this movie as a kid!! We have it and are going to watch it again. I heard awhile back they were going to do a "Goonies 2" but have not heard anything recently, I hope that they do....

Jeff Cohen (Chunk) and Jonathan Ke Quan (Data) are still good friends. Jeff works as an entertainment lawyer in Los Angeles. Jonathan has been working both as an actor and as a stunt co-ordinator in films such as "The One" and "X-Men".
Corey Feldman (Mouth) still appears regulary in films.
Josh Brolin (Brand) announced his engagement to British actress Minnie Driver in 2001, and is still appearing regulary in films - his recent work includes "Best Laid Plans" and "Hollow Man".
In 2001, director Richard Donner confirmed that a sequel is on it's way, re-uniting the original cast.
