Plural of knife is knives. I keep mine as sharp as possible, as a dull blade will tend to slip and could cut the wrong place, like a finger.

Sharp enough to cut a steak but no so sharp that I hurt myself when I trim the green stuff off my toes.

I'm a little anal about knives. I don't see a need for a knife that can't also be used to shave with,so yes,I keep all of my knives very sharp.(except butter knives)

A teensy bit duller than brand new. I've been known to slice my fingers by accident with brand new knives because I'm not used to having them THAT sharp.
