EP means Extended Play
Extended play (EP) is the name typically given to vinyl records or CDs which contain more than one single but are too short to qualify as albums. Usually, an album has eight or more tracks (anywhere between 25–80 minutes), a single has one to three (5–15 minutes), and an EP four to seven (or around 15–25 minutes).

LP Means Long Play
Long Playing (LP), either 10 or 12-inch diameter, "33"rpm (actually 33⅓) vinyl gramophone records, first introduced in 1948, were the primary release format for recorded music for about 30 years, from the late 1950s until CDs effectively replaced them in the late 1980s. The primary competing format at this time was the audio cassette, which were gradually replacing reel-to-reel tapes. Music industry pundits and audiophiles of the era argued both for and against the audio quality of each format, some aspects of which are discussed below. Both formats were analogue, as digital music recording was not technically feasible on any significant scale.

Well, the letters stem from the days of vinyl records, so they don't make a lot of sense in these digital days.
But simply put, an LP would be a typical studio album, with anywhere from 8 tracks or more, up to the 79-minute limit. An EP has fewer tracks, and serves as sort of a "mini-album" to show the record label what the band is capable of. Think of it as a "fattened" demo CD.
Logically, a band releases an EP to get a label's attention, and an LP after the contract is signed.

Those are generated from back in the day when music was distributed on vinyl records. LP stood for Long Play which was the large albums that most people think of instead of the little 45 or the 78 versions of records. EP had two meaning, one was for extended play(a very long LP) and the other meant import albums from other countries.

EP's are sort of half way between a single and an LP. They typically have about five songs and last about 20 minutes.

LP's are the traditional "album"; usually running about 40 minutes or more.
