The Chevy dealership told me that dish soap gets tree sap off of the paint. I would thing that would be safe enough for the convertible top as well.
You just use some water and dish soap and scrub and it comes off. They recommended dawn.

uhm, try some warm almost hot water with a heavy dose of dish washing soap, a sponge or wash cloth and patience. The warmer the water, the better, but not HOT lol, and yeah patience.

A mild carpet solvent. Claire is a good one. It is a solvent made for cleaning small parts, but is safe on paint and carpet. Janitorial supply stores carry it.
