What would be good typical greenery for my wedding bouquet from Scotland and Germany?

I am using roses for my bouquet, but want to also use typical greenery from Scotland and Germany-HELP!

Typical greenery from Scotland might be thistle (ouch!) or heather. From Germany could be Edelweiss or any Alpine type flowers. I'm unable to find a whole lot of information on greenery from Germany. You might try the websites below for more information.
