Probably the most acclaimed series is "The World at War." It's readily available. In my opinion though, it fails to do justice to the Pacific War. I'd therefore suggest "Victory at Sea" as an addition.

-BBC History of World War II is a 10-program, 12-disc, 30-hour collection of critically acclaimed documentaries about World War II.
-Topaz is a 1945 documentary film, shot illegally (though with the assistance of members of the camp staff), which documented life at the Topaz Relocation Center in Utah during World War II.
That is one of my Fav WWII documantaries.

My favorite is the World At War documentaries narrated by Sir Lawrence Olivia, they were produced in the early 70s as i recall.

The Colour of War series is by far the most brillant followed by World at War.
Another brillant series was Hitler and the Third Reich - i think it was a German production - Guido knopp = 'Hitler's Henchmen'. Absoutely brillant.

A good one we watched recently was called SEXBOMB .. it was all about the use of sexual propaganda and the way it was used to demoralise enemy troops ( and all sides used it).
