Nose contouring (Also cheek/eye/forehead/jaw contouring, too) means you take darker/lighter shades of makeup and simulate shadowing on your nose.
Basically, if you have a wide nose, and want to make it APPEAR thinner, you place a darker shade of your skintone on either side of your nose until you reach the desired "width". Them, you take a shade lighter and you highlight the bridge of your nose to give it a natural appearance.
Blend it with a drybrush and there you go.
It's not really practical for every day use, considering, it's very time consuming, and if you screw it up, it's EXTREMELY obvious.
I've done about four stage productions where I had to do eye, nose, cheek, jaw and chin contouring.
Contouring is usually used in the Theatre, by the way.

To make your nose look thinner you can use a lighter colored foundation in a line down your nose, then use a slightly darker color of foundation on the sides. The darker makeup will make it look thinner. Carefully blend the makeup so you don't leave lines.
You can contour your cheeks too by putting a lighter color on the cheekbones, then darker makeup in the area below the cheekbones.
A lighter color brings things forward and a darker color makes it recede.

I think it has a darker shade that your can use on the sides of your nose to make it look thinner.

it is done with the intent of hiding any flaws on the nose. a dab of foundation or a concealer is used
