The weather in May will be hot, usually around 100, and between 70-80 at night.
The buffet at the Bellagio or Treasure Island are both good, the Bellagio's a little more pricey.
Mon Ami Gabi is a steakhouse at the Paris that has outside dining. Make a dinner reservation there and sit and relax and enjoy the fountain shows at the Bellagio. It's a great place to people watch.
If you want to head off of the strip try Hash House a Go Go for breakfast. The portions are huge and the food is great!
Rosemary's is off of the strip and a great place for a wonderful meal. It is fine dining, but really reasonable and the service is impeccable.

May is hot. Generally if we have not hit the 100 degree mark yet, we are pretty close to it. And it does not cool down much at night. A temperature of 80 is cool for a Las Vegas summer night.
My favorite place to eat in Las Vegas is Marche Bacchus. It is a French Bistro, and wine bar. They have outdoor seating on a lake. And the patio is very lush with greenery. The attire is casual to dressy. Anything goes.
Roy's is a great place for asian fusian. They are a little more formal. It is not casual dining but it is worth the trip. Their seafood is fresh, and their beef is prime. There is one in Summerlin, or on Paradise.
A nice affordable place to eat on the Strip is The Grand Lux. It is the coffee shop run by the Venetian hotel. But it is a Cheesecake Factory concept restaurant. They are open 24 hours a day. The menu is ecclectic and affordable. Make sure you dry the Asian nachos, or the Bleu cheese salad! Enjoy your trip to Vegas

Weather ... VERY HOT!
Food ... here are my faves:
Rosemary's is fantastic for gourmet American, on Sahara and Cimarron. I also love Satay Grille for Malaysian food in China Town. Boa at Caesar's is soooo yummy! Guy Savoy for great French food, also in Caesar's. And for authentic Chinese, Food Express on Decatur & Oakey. The best Thai in town is Lotus of Siam on Maryland and Sahara.
