you mean play "correctly"? It seems that steel drums would take a lot of practice, as would a tuba, or a cello, or violin. Keyboards play themselves, these days. How about a Theremin?or a xylophone?

it's really human ingenuity and sweat and work and practice that makes music beuatiful. the instrument is just a tool.
if you have an instrument that is easy to play, then very quickly you will have ingenius humans who figure out how to do brilliant and extermely complex things with it.
likewise, if you have a difficult instrument, the music written for it and played on it will be a little more simple.
that being said, there are different rates of progress that people tend to have on their instruments. the violin is a very difficult instrument to sound good on unless you have achieved a certain level of competence, so beginners sound awful for a long time. this can be a very serious challenge.
on the other hand, the guitar is generally considered to be an instrument that you anybody can sound alright on fairly quickly, though it is a difficult instrument to master.
you could also make a case that an orchestra could be the most difficult instrument to play, and conductors are the musicians who master them.

No contest...it's the accordion. The accordionist is the entire orchestra (or band, depending on the type of music being played). Accordionists often play as many as five musical sections (i.e. flute, bass, harmonies, rhythms, strings, horns, etc., etc, in addition to carrying the melody) all at once. This multi-tasking also includes dynamics, prashing, and articulations for the respective instruments/sections the performer is playing. Simultaneously! Try it...it's a trip!
