I think your trying to remove your on IP address from the email details? (option 1) If so you have to use a proxy have to point the mail client to the proxy. the proxy should be in a different PC connected in a LAN. (Option 2) Use a local proxy (such as burp proxy.. or check on the web there are a lot) and change the content before sending. you can spoof the IP address.
