My favorite food to order at a restaurant is a crabcake, hubby gets the steak. We like a blend of good food and good ambiance.

Service is the most important to us. The food, although it may be excellent, is the least memorable if the service sucked. The ambience is not terribly important. The best Mexican food or Greek food we've had come from total little dives. But that's a different kind of ambience than an upscale restaurant.
As for what I order, it's whatever looks good on the menu! I don't like to eat the same thing all the time and like to try new things.

For me the quality of the food is the most important thing about a restaurant, but it is also important that the atmosphere be up to a certain level. If the place isn't clean the best food isn't going to taste very good, if I have to keep looking around wondering if I am going to be attacked by a cockaroach.
My favorite food to order is usually some form of seafood, some kind of fish, I don't eat meat.

For me, it's a combination of the ambiance, the food and the service. For example you can have a restuarant with the nicest decor and atmosphere but if the food or service is lousy than it's not worth it and vice-a-versa.
I'm usually a steak or pasta person, but lately I've been ordering whatever they have that is new or their "special". Sometimes the new or the special just taste better because they're still putting effort into it.

Honestly, how good the food tastes is the most important thing. However, if the restaurant is especially rude, with terrible service, but great food, I probably won't go there again. There are other places that I can get moderately good food in a much better environment.
I love to get pasta, or some kind of a chicken entree.

I think it is all important. Friendly waitstaff, a diverse menu, an (at least) adequate wine list, all the special extras are what draw me back time and again.
When I dine out I want either a great steak (and a cook who understands the difference between rare, well done, and charcoal of course) of sumptuous seafood!

Service staff should be well trained as to progress of service and what's on the menu. Menu should be creative, using fresh ingredients as they are available. Give good service, good quality and good value and you have a winner.
Ambiance... not too quiet, not too noisy. You want to feel like you are out among people, but not too close to them so you can't enjoy the closeness of who you are with. Low lights, but not slow low you can't see your plate. Warm colors and low music.
The worst restaurants I've been to have overambitious menus, whose staff can't assemble and time the dishes, waitstaff who don't understand timing either, and ownership/management who don't understand that the customer wants to get what they paid for.
The best restaurants are owned by people who have been in the biz long enough to know how to craft a menu that's not too complicated to implement and have the patience to train their staff. They pay their own bills on time so they have good relationships with suppliers so the product is consistently good.
I love to order things that are hard to do in my own kitchen. Like well done sautes (meat and vegetable), I just can't get my home range up to that temperature... expertly cooked soups, like lobster bisque, crusty breads, chocolate desserts... so many things that take so much time at home.
