If Guy had been with girl A for a couple years and engaged, why would he suddenly be so enamored with girl B (both good in bed)

It's fairly normal. One explanation is the biological one - a change in sexual partners is actually proven to increase the sexual drive and partners. The other main explanation is the cognitive approach - the guy is just scared of commitment, and relishes the freedom that he had before being engaged.
As a side note, that biological phenomenon about the restored sex drive is called the Coolidge Effect, and the story about how it got its name is funny enough to be worth sharing. Rumor has it that president Calvin Coolidge was visiting a farm with his wife. The farmer mentions in passing that his roosters have sex about twenty times a day, and Mrs. Coolidge uses this information to make fun of the Pres. Then, Calvin asks the farmer how many different mates the rooster has, and the response was that the rooster would have sex with a dozen or so different chickens a day. The President then used that to make fun of his wife.
Okay, so I suck at telling stories, but you get the idea. A variety of sexual partners can be reenergizing for the guy.

Because either Guy has tired of the "Smart & Pretty" one & is just looking for a way out, maybe pre-wedding freak-out, OR Girl B, although not as pretty, is more of a real, well-rounded person than girl A ever was, and that appeals to guy on a deeper level than Girl A ever did.

Beauty is on the inside as well as the outside. So you can have a horrible Girl A inside, but looks good outside, but Girl B can be a hottie on the inside and look "worn" on the outside..and you would be attracted to them both for different reasons...
Beautiful people can be really ugly and ugly people can be really beautiful.. just depends on what you want in a relationship...

Because maybe he is not so in love with girl A and girl B gives him something girl A can't. Maybe Girl B is his soul mate no matter what she looks like. Looks won't keep you warm at night.

Maybe they have a sort of connection; understanding, personality matching, or just plain chemistry. However this guy needs to make up his mind cause it's cruel to lead on either of these girls good-looking or not. Hope this helps!

Maybe because "girl B" has a better personality and/or makes the guy in question feel better about himself than
"girl A".

Maybe he got tired of all the other guys chasing after girl A. Maybe he felt that girl A liked all the attention that she got from men and he didn't like competition.

Because he is a jerk. If the guy is interested in Girl B, that means that he is not satisfied with Girl A, and I think Girl A should break up with the guy.
