Depends on the load it draws. I had a commercial oven in a kitchen that required #6 copper to be run.

Here is the breakdown when running copper Romex
#10 30 amps
#8 40 amps
#6 55 amps

The wire used should be rated for the device amperage probably 30 amp 220v and protected with the appropriate breaker, more than likely a no. 8 wire is used, I'm not an electrician but if I were asking this question I would be asking an electrician.

all of it is "THHN" whether it's single conductors wrapped inside the new romex or individual conductors in a raceway; you should be asking what size wire ? and that would answered by reading manufacturers label on the back of the stove or in the owner's manual. it will be 208 volts to 250 volts . and the KW needed willbe listed divided the voltage ; use 240 volts as starting value. 240 divide into the Kilo Watts = the size of amperage , then use the proper size wire to carry the load

It does depends on the amps...I would recommend you find out the amp load..add 10% then find out what wire would carry your load...probably a #6 or #4 considering you said it was a double oven...

a double insulation wire with higher amp(# 8 or #6),a wire sleeve w'd enhance further safety of ur oven.take care.
