can a retirement community take away differential pay for not attending a mandatory meeting that was made 2 days prior

Read your employee manual. That should spell out the company's procedures & policies.

Check with your union representative - that is what they are for.

If you do not have a union contract, you are probably out of luck because of the doctrine of "employment at will." That essentially means that your employer can make any changes they want in your employment at any time and you have no legal recourse unless a specific statute is violated. Good luck!

Did you sign any kind of contract that says you would have
deductions taken for not attending? Do you have a copy
of the community b-laws ?. If you have not signed any contracts or agreements you should not have any type of pay
withheld.

I don't think that's legal. Check with your union representative to be sure; looking in the employee's manual is a good tip too.
