I want to grow a vegetable in a clear pot for my daughter's 5th grade class.
It will be a learning project so something easy and fast. I will be using a clear container so that they can see the roots and vegetable growing.
I live in Southern California so the weather is usually nice and sunny.

A lot of botanical research is done with radish and nicotiana (tobacco) seeds and plants, because both are fast and easy to grow. Keep some of your glass jars covered with tin foil to demonstrate how roots will grow away from light. RScott

When I make a veg. garden with my grandkids, they like stringbeans, because the get done the fastest,and don't really need much.except water sunlight, and then they can eat them right of the plant. You can also to some of the herbs Parsley, basil, oregano, etc etc.

When I was in school, I did a sweet potato. It grew in a clear jar of water and worked great for my school project.

A bush bean or pepper plant. Either one would work well.
