Wouldn't it be easier and more accurate just to take a picture?

Many judges do not allow cameras in the courtroom. Simple as that.

Why? Because a camera can capture things that may not be appropriate to remove from the courtroom, such as faces of jurors, faces of witnesses, evidence, etc.

A sketch is simple enough that it can be reviewed, if a judge wishes, to determine if it contains anything it shouldn't.

Yes, it would be more accurate to snap a picture. It would and could, though, disrupt the proceeds in the court. They need to maintain order in the court and prevent a circus.
