Specifically I would like to learn what Vietnamese infants typically eat when first trying solids. Is it a rice congee like in China or ???

It's kind of a mashed rice porridge for the infants you describe (made with water).
Sorry, I don't know what a congee is.

Vietnamese arte always eat rice every day as one of the most important food and popular in many Asian countries!

Vietnamese also eat meat but too little;mainly pork,followed by chicken,beef and duck as popular meat dishes!

Because Vietnam is one of the most populous Buddhists of the World (about over 85% to 90% Vietnamese are most effecting by Buddhism-Taoism-Confucianism which are all in one called "Tam giao"-Triple religion or "Mahayana Buddhism"-East Asian style of Buddhism).That is why many Vietnamese like vegetarian dishes as usually!

In Central coastal region of Vietnam,they prefer to eat sea foods!

Vietnamese dishes are one of the TOP DELICIOUS FOODS OF THE WORLD (Chinese,Italian,Thai,Japanese,Indian,v.v...) because Vietnamese food is very low-fat,healthy and easy to cook!

a lot of vietnamese families are very UN wealthy. so if they cannot afford to buy a bowl of noodle soup, then a lot of the time they have to eat rice with salt and or sugar.
