Is it the string and the number is the fret number?

yep...

the number between strings is the fret number like
E |---------7-----|, which meens "7" is the number of the fret (7th fret) and "E" is the string like the one at the bottom

that is correct, the top string is the high e and the bottom string is the low E

It should look something like this
el----------------------
Bl---------------------
Gl----------------------
Dl---------------------
Al-------------0-------2
El-0----3--------------

what this means is, you play the low e string open, then the 3rd fret of the low e string. Then you play A open, then the second fret of the A string..... its not complicated once you know how to do it

Yep. Make sure you know which E is on which end for the tabs, and that's basically it.
