I want to install a new exhaust for my car and they said it will take about 2-3 hours to install it including system cool down. What is a system cool down?

i own a shop and all there talking about here is the exact amount of time it takes to cool the whole system down on it,never attempt to do this while its hot anyway ,sometimes things will warp if removed while there real hot, that and you can get burned on this stuff real easy,,but that's what there meaning by this, good luck i hope this helps.
