Orochimaru probably knows over 100 Jutsus, as stated in an episode but no one knows exactly how many he knows. Particularly because he is able to take over peoples bodies, and that probably allows him to know more jutsus, so it's hard to keep count, and they never officialy said how many he knows.

As for Itachi, he isn't afraid of Jiraiya. He never stated that he was, although he said it would be a bit troublesome with Jiraiya around. The reason why Itachi left instead of fighting Jiraiya directly was noted. He had used his mangekyou sharigan just earlier on Kakashi, and then on Sasuke, and then he used his more powerful jutsus as well, while not in direct combat with Jiraiya. He stated to Kisame, he didn't want to use too much jutsus as that would be too much [as with most ninja in the series, they can only use so much jutsus before their chakra runs out] so rather then saying he was afraid of Jiraiya, he just didn't have the chakra at the moment to go face to face with him since he had been using his jutsus on other people and hadn't expect to come across Jiraiya. And as stated Jiraiya said he knew Itachi was powerful.

well it cant be measured how many justu Orochimaru has. Hes been away for soo many years, he probabaly came up with a few new ones and learned a lot of old ones. In order to join akatsuki, you hafta have a good amount of justus, or a handfull of really good ones.

For the other question, I dont think Itachi is afraid of Jiraiya. That episode where Kisame and Itachi were trying to get Naruto and they end up fighting Kakashi, Itachi says that he doesnt want to fight to the point where they start a war. Itachi was and is stronger than Orochimaru, and since Oro and Jiraiya are the same, I think Itachi could beat Jiraiya. However, if reinforcecments were to arrive, that gap could easily be closed.

There is no known number of jutsus Orochimaru can perform since he's trying to learn EVERY jutsu ever! Thats why he needs Sasuke's body, so he can continue to live forever and learn all the jutsus in the world.
Im not sure why Itachi would be afraid of Jiraiya, Jiraiya even admitted that Itachi is alot more powerful than he is. Especially with hims Mangekyo Sharingan.

oro has about 100 stated in ep 79. itachi is a bit stronger than jiraiya cus of sharingan but the reason hes afraid is cus jiraiya is a sanin and he can perform thousands of ninja attacks. itachi was also scared because jiraiya is teaching naruto and he has the kyuubi.
