Hmm...let me try to get in touch with my creative side...

A knight is a courageous lion, willing to fight for what is truly his.

A knight is a courageous lion, carrying his much-needed sword and shield by his side.

Uh...I think comparing the knight to a brave animal would work well. Lions are generally brave, so yeah those are both about lions. I like the first one better, but use which ever one you want!

That Courageous Knight Was So Brave He Is A Drop Of Valor, Never Ending Strength With Pure Intensity Of Light And Justice,[ Very Poetic, Yes] Also A Metaphor Is A Simile With Out Using Like/As! Try Something Brave And Something Sucessful Such As A Gryffin, Lion, Tiger. Etc.

Michael J. Fox provides a sterling example of bravery. If, by someone who is brave like the knights you mean someone who exhibits physical bravery, try one of the front-line medics who works under fire but has no firearms him or herself or the lifeguard who launches him or herself into the waves to rescue someone in distress, often ignoring the fact that s/he is putting him/herself in danger by doing so. .
