It would depend on how many eyes it has (those buds that come out of it). It might depend some on the size, as well... the bigger it is, the more eyes it might gain. Look for potatoes with more eyes if you want a lot; less if you're looking for only a few.

A half of a spud will produce between 5 and 7 decent size spuds. It's not recommended that a whole spud be planted.

A decent sized seed potato can be cut into 2-4 pieces. Plant each piece about 8 inches apart. Each piece is capable of producing 4 to 8 usable potatoes...
