Why did South Africa collapsed in the game against Australia after GRaeme Smith start having Cramps?

Well, keep in mind, that even while Smith was batting, the South Africans had to score at around 7.7 an over before the innings even started. Graeme Smith and AB de Villiers both batted well, however, whenever you lose wickets, or a batsman through injury, it puts pressure on the middle and lower order batsmen, moreso when you're chasing 378 to win. So the simpliest answer would be South Africa just collapsed under the pressure, knowing that had the won the game, they would've carried 2 points into the Super 8 stage.

I have played the game of Cricket so much & I know when the momentum breaks of the player, specially in batting then it is difficult to restart your inning & also when the very good partnership like Graeme Smith and Ab de develiers had, breaks the other partner of that partnership also gets out quickly and the upcoming batsmen also follow their footsteps, these all things are psychological.

Australia posted a huge total. Though South Africa have chased and won huge total against Australia in the past, this time they lost the momentum and as the asking rate went on increasing, other players could not cope up the increased asking rate.
