Before adopting a (final) decision, I would like to invite you to take
a look at this website:
http://www.tripadvisor.com/Tourism-g4-Europe-Vacations.html.
Just choose your desired (virtual) destination and then read all the
informations provided.
And because you are attracted by places full of sun (beaches,
I think), please also click on the following link:
http://www.bugbog.com/beaches/best_beaches.html.
Although I have never been there, I would like to recommend you
a possible destination: Croatia; and mainly, the Kolocep island, at
the Adriatic Sea.
Kolocep is one of the Elafiti islands which lie along the Adriatic
coastline, opposite Dubrovnik at the southern end of the country.
It has some of the loveliest, secluded beaches, in Europe.
The most famous beach in Croatia is Zlatni Rat beach, on the
Dalmatian island of Brac.

Stayed in Praia da Rocha, Portimão, Algarve at New Year’s and going back there for Easter! Visually stunning and very relaxing!
Was very warm after New Years with the beach empty. I expect it to be warmer and more lively but not crazy!
Very reasonably priced, particularly during the low season (non-school holidays). Worth investigating!

Sunny, cheap, full of history and places to go - although it's not an island, but full of spas and got some holiday resorts around as well: I would recommend the Paris of the East, Budapest.

We just booked for Rhodes. There is a choice of noisy or quiet resorts. The only drawback was the travel to Luton airport.
