Here's something creative that will be appreciated and you will have fun doing:
Make up a crossword puzzle and have all the hints be personal inside moments and jokes that only you two would know about. Put it on a poster board and add some clipart and some pictures to it!
The crossword puzzle could be time consuming and a bit frustrating ... you could do the same idea with a WORDSEARCH or WORDFIND puzzle.
Put your computer skills to work! Use Excel, get clipart from Yahoo Images Search, copy them, and reformat them, use a gluestick to put on posterboard.
Use graph paper, and pictures from magazines if you are not as good on the computer, and it will give it a homemade feeling.

It sounds that he may posses every tangible thing.
In that case, try to prepare something intangible.
The best thing would be a "nice unforgettable memory".
If you have other family members, how about preparing
a Video Message containing a lot of nice words and acknowledgement for his contribution to the family and word of thanks for his long service for supporting the family?
It would be more ideal if you could plan a trip to some resort places with your father and let him enjoy the things he is interested in, but hasn't been able to get around to do it.
I am sure that a thoughtful and affectionate thing would be more than some tangible things.

My Dad is like this and choosing a gift is always difficult. How about a nicely framed photo of the two of you/the family, or booking a professional photographer to take some pictures and having the best one framed?

god you have a hard dad to buy for , like me does he have a hobbie or is there anything that he would love to try ,
my father always wonted to go scuba diving ( don't no why cause he swims like a brick) and to go in a helicopter , he was 60 a couple of yrs ago so me and my 2 sisters bought him some helicopter lesson and took him scuba diving , the look on his face said it all he was made up , maybe get your father some ting like that and thay didn't cost that much have you any brothers or sisters to chip in together.

Something active that'll make him feel young again. Like tickets to go and see his fav band from when he ws young (if the band still plays). Is he adventurous? Get him and his wife/girlfriend ... on an activity weekend. If he's more reserved, then a weekend away for two would do wonders for him.

I got my dad, who just turned 70, the weather forecaster from Brookstone and he loves it! It's a little pricey (4 me and my cheap @$$) but it certainly is worth it to hear him talk about it how much he continues to love it on a daily basis.

Find out what he's interested in - fishing, golf, baseball cards, sports, reading, etc. And take it from there.
Why don't the two of you go to a sporting event!
