A jade is an ill-natured, perverse or untrustworthy woman. In this case, the sort of woman who would make a provoking remark and then walk away so that a polite gentleman or lady is unable to present their argument. "A jade's trick" is a particularly biting description in this case as it is made by a woman about a man's behaviour.

Beatrice means that he uses a cop-out that she can't make a come-back for, to make it appear that he has won the battle of wits because he spoke last, when he actually just gave up.
