I fell in love with South Africa - everyone speaks English and living is good and inexpensive. My personal favorite was Cape Town - simply amazing. I was on a cruise ship and the sail into port is stunning. Table mountain offers amazing views of the surrounding area. Also the Waterfront area is a great place to have dinner.
From Cape Town, you can take day trips and explore many great places. I recommend Frommor's South Africa - 23.99 from Barnes and Noble for more information. Try to meet some locals and suggest a South African BBQ, unlike any you've ever been too.

Visit Ghana. No matter how you are planning to travel, Ghana has it all. A wonderful people, a beautiful country and a great dose of history. You can hang out at backpacker beach lodges for weeks for real cheap, visit the slave forts of the past, and go on mini safaris in the north. They have five stars and guest houses alike. Truly Ghana is a wonderful place for a vacation.

Definately think about Ghana. Beautiful country, nice people, great weather, stable political environment. I live here, so yes I'm biased, but definately think Ghana's got a lot to offer. The capital is Accra, but you could go to Cape Coast, Ada Foah, Akosombo, Takoradi, Mole National Park, lots of choices here.

Morocco is generally considered safe, as is Tunisia. Jordan is also highly recommended, even though it is between Israel, Syria, Iraq and Saudi Arabia. If you can afford it, Kuwait and the U.A.E are excellent places to vacation.

Cairo, Egypt is amazing the people there are really nice and they have endless things to do, and its also a pretty safe country!!
