Take boneless, skinless chicken breasts. Lay them between a couple of sheets of plastic wrap and flatten them using a meat pounder or rolling pin. Be careful not to beat the hell out of them. Just pound them gently until they flatten and become thinner.
Salt and pepper each breast. Take prosuccito (or sliced boiled ham if not) and place a few slices on the breast. Add a couple of slices of provolone cheese. Now roll the breasts up (like a jelly roll) and secure with toothpicks.
Dredge the breasts in flour, shaking off excess. Dip in beaten egg and roll in breadcrumbs. Place in a pan of hot olive oil and fry turning them until all sides are browned.
Place them in the oven at 325 degrees for about 30 minutes. In the meantime, saute sliced mushrooms in some oil in the same pan. Add 1/2 cup of marsala wine to the pan to degalze it and simmer until the alcohol evaporates. Add some capers to the sauce. Once the chicken is cooked through, spoon some of the sauce on a plate, place a breast (chicken...not yours or it'll burn in the hot sauce) in the center and spoon alittle more sauce over the breasts. Remember to remind your husband to remove the toothpicks before eating it.
Serve with Spinach Fritters:two packages of frozen spinach, thaw and squeeze dry. place in a bowl and set aside. saute some finely chooped onion in olive oil. Add that to the bowl. Add more oilve oil to the pan and while heating, mix 1 cup of flour, two teaspoons of baking powder and one beaten egg into the bowl. Mix thoroughly and take a tablespoon and scoop out some of the mixture. form into a patty and fry in the oil until lightly browned.

just be creative.
any meal can be "special" just set the mood......
get some candles or just set the table nice.
i like to make my pork chops.
there is this packet they sell at the store that is for pork chops and it comes with a bag. you put the pork chops in the bag add the seasoing with some water. put bag on cookie sheet (of course tie the bag) it has directions. then just make some corn or stuffing with patatoes...
maybe some wine or something.

My fiance makes marinated steak tips (balsamic vinegar, red wine, garlic, rosemary, worcestershire sauce) with mashed potatoes and I love it..especially after working a 14 hr shift..Also, how about clams casino or chicken caccitore?

what does he like, make some stuffed shells with spinach or manicotti,, for something easy make a quiche with leftovers or put some spicy sausage in it, or what not,
