Just be honest and explain why. Did you move, Get married, decied to be a stay at home parent, volunteer, incarcerated? Just explain to the employer why you had a gap and then follow up with demonstrating how you've kept your skills current and will be an asset to their company.

Thats easy.. write in your resume all the real jobs and existing companies you've had then do some research on companies that have gone out of bussiness which may of had the same type job and add them. Pretty hard to check on them.. ;-) Oh..yeh use fictious bosses as well..most companies don't even do a check.. good luck..
or you could just be honest about why you had a large job gap..
