DNA and polymers can be spooled because they are very long chains with high molecular weights. There is sufficient mass and sufficient length to actually wind the material around a glass rod, etc. With proteins, however (even heavy ones), there is generally not sufficient length to wind around anything. In other words, the molecules are not long strands, so they can't be wound or spooled.
