As you say, Rabbits don't lay eggs, and looks like the Easter Bunny is a male from the most illustrations I have seen in Children's books.

Bunnies come out at Spring time, along with daffodils and chicks, which is usually why the media put all these together along with the Easter eggs to make it look more attractive and symbolic. Tho the symbolic meaning doesn't show any sense to what happens in real life!
I mean you know where the egg comes from right? All about Jesus rolling away the stone, so really chocolate Easter eggs don't make much sense to that too.

The Easter Bunny only carries the eggs until he gets to hide them.Then you have to go find them.Just to carry his eggs in OK?

Jesus wasn't crucified at this time of year, but the Christain church needed to ensure that Pagan festivals (Ie the Spring soltice and Winter soltice) were "overwritten" or overlapped with the christain key events of Christmas and Easter, so the pagan people could be more easily emalgamated (please excuse my spelling!)
The pagan people needed to be 'sold' christainity, but would be relucant to give up the old ways. This way the christain church could more easily be introduced. Imagine it like a rebranding! :)o
There are many symbols of the old pagan ritual that still remain, like holly and mistletoe at Christmas, and the symbols of fertility - eggs and rabbits.
