We have and Xbox, 360 and Gamecube.... Here are some of the games we enjoy
Combat games---
Lord of the Rings the Third Age ( most other LOTH games are single player or vs.),
Halo,
Halo 2,
Gears of War,
Conflict Games (Desert storm I or 2)
Brothers in arms... Note most war games will have co-op
Adventure Games -
Kameo,
Toejam & Earl (one of my favorites),
Blinx 2 ( #1 is only single player).
Shrek 2 (again #1 is only single player),
Teenage Mutant Ninja Turtles,
Crash Tag Team Racing (lots of fun but can only play two players on race track , single player while walking around)
Harry Potter and the Goblet of Fire (others in series single player).
Also many sports games by EA Sports such as NHL
Many of these games are available to All systems but some like Kameo, Halo series and Toejam & Earl are XBOX exclusives.... Enjoy!

Final Fantasy: Crystal Chronicles for Gamecube is a good one, but it requires each additional player to have a GBA with the FF: CC cartridge.
You could also try Legend of Zelda: Four Swords.
