We thank you (don't say 'Lord,' 'God', 'Jesus', or whatever) for assembling us together and, at least, for this time and moment, making us feel as one. Bless the food You have provided to the nourishment of our bodies that it may sustain us and give us strength. Guide us in all we do. Amen.

Different denominations shouldn't be a problem if they're all Christian. If they aren't, while it might not be the most kosher or cool thing to do... stick to your values. Any good, heartfelt prayer you have for the banquet should be just fine. Something memorized is generally something not meant at the core (no offense to those who believe they have to use memorized prayers only...).
As long as you're praying to the Father in the name of the Son as the Bible instructs, and you mean it, you'll be just fine. If people get offended, it's something in them, not you. I wouldn't worry about it too much... if worry is the biggest issue (ie. How can I please everyone) then ask God ahead of time to give you words that will be pleasing to Him but also not offensive to others.

Thank you for bringing us all together to celebrate with each other. Thank you for blessing us all with this bountiful banquet where we can celebrate with one another your glory and kindness. Thank you for our health that allows all of us to gather here in this joyous moment. AMEN.

I would think that anything you would say will be appropriate because your thinking ahead of what you going to say. And I would'nt worry about offending the few atheist out there, I believe they would get over it!

I like the TXlady's prayer - it is short and sweet and should not offend anyone.

Be careful there are no atheist like myself there, we take great offense to such things, just think of it like this, would you like it if before we ate i said a speech about there is no god and god is a waste of time and a joke? Just keep that to yourself unless you are in 100 percent like company

Bless us, O Lord, and these, Thy gifts, which we are about to receive,
From Thy bounty, through Christ Our Lord. Amen.
