Many states in the USA west of New England used Township and Range as a surveying method. This method tends to make states without an unique geographical feature as a border (mountain range, lake, river,etc.) square or rectangular. East of the Appalachians Metes and Bounds was generally used. This method drew borders between trees and rocks and such instead of breaking the territory into large squares divided by smaller squares. Older countries like those in Europe were established before modern surveying techniques.

New Mexico, Colorado, Wyoming. North Dakota, South Dakota and Kansas are more rectangular. Oklahoma is almost rectangular. Portugal is sort of rectangular. There are territories in Australia that have a straight border, but I wouldn't call them square. Most countries have rivers as borders and rivers are almost never straight. Egypt is almost square.
