'Should of' is an abomination to the English language, the only correct way of saying this phrase (given these two choices) is I should have phoned in sick.

The 'of' part of the word comes from the contraction 'should' + 'have' = should've; which is also perfectly correct. However, it does sould a bit like 'should of' which absolutely is not correct.

Should have is the correct phrase. A shortened version is should've.

It does sound like 'should of`when spoken - but should have is the correct form.

When 'should have' is shortened to 'should've', the sound is mistakenly heard as 'should of' which is a non-existent English grammatical form.
