What would their countries be like today without the massive daily influx of $millions/billions per day that their lucky geological oil deposits has allowed them ?

I don't know what they would be like,if they hadn't have any oil,but I know for sure that the people there wouldn't be killed,tortured,shot, bombed and even raped so much.They would likely be happier than now.
The ironic reality is that the biggest part of the money you have mentioned is shared by the western oil companies and their native collaborators within the countries.
Saddam refused to give the Iraqi petrol to those companies and we saw what happened to him.Mussaddik,the Iranian leader before Riza Pehlevi,attempted to nationalize the Iranian oil,he was overthrown and killed with the support of them.
Today the companies,such as Shell,BP,Exxon and Chevron have made a deal which gives them the right of using the 75 % of Iraqi oil.Now,it is Iran's turn,because it refuses to give those companies such a right.
No matter how their administrations are horrible,It would be unfair to ignore all these aspects while judging those countries and their peoples.
Your question is really very good,but the idea below could be added to it,too.
What would Western countries be like but for the petrol from the region?
Believe me the peoples living in those countries are not so wealthy as you think.

I'd like to answer with a question: which Mid East countries have no oil? How are they faring?

On the other hand, look at the question more broadly: THE WHOLE WORLD would be poorer if the #1, #2 and #4 oil producers didn't have oil in the first place. That "massive daily influx of $millions/billions per day" comes from countries that enjoy a "massive daily influx of millions/billions of barrels of oil" from Saudia, Iran and Iraq, enabling the generation of BILLION$. It's a cycle and you cant stop one half and then ask how the other half is rotating.

This question is a nullity because it does not deal with the whole picture.

FURTHERMORE, it's interesting to imagine how much more peaceful the Mid East would have been without oil? There would not have been not much superpower interference in ME politics over the last 50 years.

FURTHERMORE, oil will run out one day (maybe late in our lifetimes). I think there will be horrible world wars.

If oil have never existed i think the middle east would be alot better off. They would be richer I'd believe because the main reason why middle east have so many different nations is because of the western powers taking over and dividing them for oil reasons. If the middle east would unite and become one big muslim nation, the unification alone could bring alot of income with man power and military. The world could be alot more dangerous also because the big muslim state would go after inferiors. All the major western powers after world war 1 took control of the middle east, and held on to it because of oil and in which made countries colonies and made them poor and made them have borders. Also america would have never helped kuwait or even be over there right now if it wasn't for oil, the whole world would be richer i believe if we had found another way to produce energy.

depends on the context of the question, if you are implying that some other country had the oil instead then the whole world would be reshaped.

I would like to know where the world would be today without oil. No wars - not just Iraq but imagine world war without oil, it just wouldnt happen, no rockets etc.

We would all be living naturally using solar/wind power etc and probably fighting each other with sticks!

Well I'd like to think they would be on the same sort of economical scale they are now. Don't forget there is alot of talent in the middle east and Asia. By this I mean company's who develop software, hardware and so on.
Forgot to mention if they never had any oil America and many other countries would be in economic turmoil. If Saudi alone took all of its money out of american banks the country would grind to a stand still.

I agree each of the countries does have its fair share of highly intelligent academics. A surprising number of genuine scholars in all fields from science to medicine.
