simply because the vapor of what ever you mentioned composed of the same atoms of the liquids but only in vapor form, so why tea taste like tea and coffee taste like coffee is exactly the same for the smell. our noses just like tong will DE-code the code related to that form and distribution of atoms and send signals to brain to identify them

The vapors from coffee, tea, diesel, etc. are the result of small particles of the substance being caught up in the volatization of the substance. Coffee and tea are warmed and this increases the volatility of the substance. Diesel also volatizes, but it will do so a much lower temperature. Do not confuse vapors with gases. Gases are an example of the actual substance converting to a gaseous form from a solid or a liquid. Try this. Make some coffee or tea. Note how strong it smells when it is hot. Then let it cool. Make sure you are away from the coffee or tea while it cools, then after it is cold, see if you notice a difference in the potency of the coffee or tea smell in the room. You should notice a much weaker smell of the coffee or tea. This is because the volatilazation rate is decreased by the cooling of the coffee or the tea and less particles are being carried into your breathing zone.

All aromas are caused by chemicals. The various chemicals that are responsible for the smell of tea enter your nose and your brain will recognise the smell as tea
