amino acids have two parts

1) a polar part made from the function(s) amine and acid which are ionized and are POLAR which means they bare an electric charge. These polar Groups are highly soluble in water which is a polar substance. H2O as two bounds OH which bear a fictive fractional charge H being positive and O negative. And it is a general rule polar solvent dissolve polar groups

2) The other part of the molecule is called APOLAR,. Depending on the acid it is a chain composed of CH2 groups which bare no charge. apolar groups are not soluble in polar substance as water;

So the more you have apolar groups growing with the quantity of C, the less your amino acid is soluble in water
