Your question should be 'Why are notebooks called notebooks?' ;-)

A 'laptop' is usually considered a bigger portable computer than a 'notebook'. So a laptop is not neccessarily called a notebook (try a search for 'notebook definition'). Though a lot of people do use the terms laptop and notebook when they mean to say 'a portable computer'.

A paper notebook is something where you can write into, you usually do not write into a normal book. Since a portable computer can save and store information, it is called a notebook instead of a book.

Last not least, the term notebook emerged after the laptops became so small in size that they could be put into a briefcase (like a paper notebook).

On a side note: One of the first portable or better say transportable or luggable computers had a weight of more than 10kg, like the Osborne 1. Some describe those early machines as 'just slightly smaller and lighter than a bank safe'.

If you realise, laptops are widescreen and don't have the squarish shape like your usual monitors. So they are rather shaped like books. And the fact that you can open it up, makes it more cool like a book. Haha.

The lightweight of laptops gives a contrast between the normal PC. So why are they not "books"?
