Salt (Table salt) consists of sodium and chlorine

Sugar consists of carbon, hydrogen, and oxygen

Quartz consists of silicon and oxygen

Salt, as said before, is NaCl. And when you say sugar, i'm going to asume you mean simple which is C6H1206. I'm not sure about quartz. the thing with sugar is that there's a lot of it and there's different kinds of it so. . .it varies.

By salt, I presume you mean table salt (there are lots of different kinds), and this is sodium chloride - NaCl. I used to know sugar, but don't remember anymore. Quartz varies, because it is itself a sort of hybrid stone.
