Well, it depends... do you like shounen or shojo?
Anyway, here is what I like:
1. Skip Beat! -- its a story about a highschool girl who, being asked, runs away to Tokyo, and essentially acts as a cheerleader to promote the singing career of her "prince". But, she overhears him saying one day, with his female manager, that she's really like a dishrag. Kyoko (the girl), suddenly changes from the loving/kind/selfless girl to being vengeful/demon-like/but-still-eccentric, and swears to get revenge on Sho (the "prince") by becoming more famous, through the show bizz, being an actor. I really like it... and then another character is introduced, an actor, named Ren, who has a really mysterious past...
Its also romantically inclined. :P
2. Fruits Basket (otherwise known as Furuba) - is about an orphan girl who comes to live with the beautiful, cursed, Sohma family, and tries to help them, on the way restoring some... the end. :D No, no, there's a lot more to it... really, its a great series, I love the characters. Its quirky funny. And the manga is a lot different from its anime adaptation. You'll find yourself coming to love Kyo-- I mean, *ahem*, Natsuki Takaya's wonderful creations.
3. Rurouni Kenshin (an anime of this was created, titled "Samurai X") -- alright, alright, I get it. You can check out these summaries via Wikipedia.
4. Naruto
5. Death Note
6. Hana Yori Dango (a.k.a Boys Over Flowers) -- I have to say, purely relationship driven (between male and female... yeah)
Other notable mentions are Hikaru no Go, Dramacon (though only 2 volumes are released so far), Trigun, Ranma 1/2, the Wallflower...
-->You know, you can subscribe to Tokyopop's Takuhai. Its a periodical magazine with previews of usually new manga series, with bonuses like interviews and quizzes, and also calenders of release dates.
there are animes that I've watched that were based off mangas, but I've only watched the anime. And I thought the stories were good/intriguing.
Those series are
1. Beck Mongolian Chop Squad -- the characters, throughout the story, use their musical talents, so I found it better to actually get to listen to them.
2. Wolf's Rain -- umm... you get to hear the wolf howl... no, I just realized there was a manga to it.
3. Inuyasha -- eh... what can I say...

Fushigi Yuugi and Fushigi Yuugi Genbuden are pretty good stories by Yuu Watase and some of her other works such as Absolute Boyfriend and Imadoki.
Angel Sanctuary by Kaori Yuuki is a pretty good read, a longer series though.
Ouran High School Host Club, and Fruits Basket are good comedy series about high school students, School Rumble as well.
Peach Girl, and Peach Girl: Sae's Story is a good romantic drama/comedy to try out.
Fullmoon wo Sagashite is also a decent read , sort of a magical girl anime although a bit more dramatic.
NANA also is a good realistic drama.
^^ those should keep you busy.
