The two engines have different missions. The Nissan motor is the top power plant on their flagship sports car. So of course Nissan is going to make it as powerful as they can while keeping an affordable price and an engine reliable enough they can put a warranty on it.
The V6 Mustang has a different mission: It's the base model motor, and needs to be cheap while providing a reasonable feel of sportiness. So Ford designed it for low production costs and also designed it so you don't have to rev it hard to make power (which is why it is so large). Ford's found over the years that Mustang buyers who want performance opt for the V8. They tried selling a hot four cylinder version in the '80s that made every bit as much power as the 5.0 at the time. It wasn't nearly as popular.

I am dissatisfied with the answers so far.
For one thing, you're comparing a sports car with a sporty car. The Mustang's V6 is not tuned for sports the way the Nissan's is. It's Ford's pedestrian ponycar. Why bother adding exotic hardware to an engine when one of Mustang's selling points is the Great American V8, which can effortlessly put out 300hp? Now you're talkin'! And the Mustang's V8 puts out more than that anyway.
Additionally, there's an issue of hp to weight. Of course, less hp is needed to push less weight for equivalent performance. While the Ford's V8 looks unimpressive from a hp/size ratio in comparison to the Nissan, its performance is equivalent in many ways. They are two very different vehicles that suit two different kinds of people.

That is because American technology is different than Japanese technology. American companies have to make big engine for there cars to go fast while german and japanese companies could use smaller engines to go fast. The Porsche Cayman S has a 3.4L 6 cylinder engine with 295HP and the BMW Z4 has a 3.3L 6 cylinder with 333HP.
