Does anyone know what the goo is made out of that when squeezed, it turns hard and when set for a few seconds, it gets liquidy?
(not the goo made out of glue)

corn starch and water. its well amazin!

I'm not sure, but custard does the same thing.
Under pressure it becomes a solid and when the pressure is released it changes back to a liquid.
It is possible to walk on a swimming pool of custard, but standing still will make you sink.
I don't know what this has to do with the question, so I will shut up now.

corn starch and water. The corn starch molecules are really long, so when moved slowly, they have time to readjust and get out of the way. When you attempt to move them quickly however, they just tangle, and the solution appears to solidify.

Sounds like a compound gelatin to me. Perhaps a polymer. . . like that "instant snow" polymer but with added stregth possibly from a natural thickener (corn starch perhaps?)

Pretty much what everyone said is correct, but more generally what you are looking to find is something called "Non-Newtonian Fluids"

That will get you what you are looking for.
